What
Our turkeys are certified organic by http://www.nofany.org
NOFA-NY. Poults are purchased from a hatchery
in Pennsylvania and shipped to us on the day they are hatched. We brood
them indoors for 6 weeks, then we graduate them to bottomless cages on
pasture. They are in the cages for a period of 2-3 weeks which acclimates
them to the outdoors and provides ample protection from the elements.
When we feel that they are outgrowing the cages, (and know enough to come
in from the rain!) they graduate again. This time to a moveable shelter
that is surrounded by electric netting. The netting provides a much larger
area for them to roam, as well as protection from any predators that might
be in the area. Turkeys are aggressive foragers, packing in the green
stuff with great gusto and joy! The pasture diet is supplemented with
organic grains and minerals. The result is an incredible tasting bird
for you and your family to enjoy.
When & Where
We raise two groups of turkeys every year - summer turkeys, available
in August, and Thanksgiving turkey, available, of course, in November.
This year pick-up dates in November is yet to be determined for the Thanksgiving
birds.
The summer group started out as 4-H projects for the Cortland County Junior
Fair for the kids to raise. We ordered a few extra in case our chicken
customers were interested - and that’s how we started doing summer
turkeys. I like to cut them up and brine and grill the breasts, and/or
slice for sandwiches. Wings and legs can be barbecued, or made into turkey
and biscuit, or turkey and dumplings, or turkey pot-pie, and freezes well
for those first chill fall days. With proper planning and used to their
fullest potential, turkeys can provide many meals and be quite economical.
